Thought I would share this nice apple, orange and walnut rice recipe that I make. It's perfect for the hot summer months, is light and refreshing, and full of goodness:
200g Brown rice
100g Braeburn apples, sliced finely
30g Walnuts, lightly crushed
450ml Boiling water
2 tbsp Coconut oil
1 tsp Chilli flakes
2 Red onions
Rind from a small-medium orange
Start by soaking the rice in cold water for around 30 minutes. Rinse the rice well and add to a dry pan on a medium heat and toast the grains for 1-2 minutes. Next add in 1 tbsp of coconut oil, the orange rind, and 450ml of boiling water, and allow to simmer for around 25 minutes, or until rice is cooked.
While the above is simmering sweat the onions in 1 tbsp of coconut oil for 10-15 minutes, and then add the chiili and walnuts, and stir for 2-3 minutes. Toss through the apple and transfer all to the cooked rice pan.
Fold through and serve.
