I really enjoy this lamb mince and rice recipe as it’s simple to make, full of goodness, and tastes delicious.
I like to serve this dish on a bed of basmati rice (see picture), though it would also be nice going inside a baked potato, or with pasta.
500g Lamb mince
Small bag new potatoes (quartered)
2 Lamb stock cubes (mixed in water)
1 tbsp Tomato puree
2 tsp Oregano
2 Carrots (diced)
1 Onion (diced)
3 Garlic cloves (diced)
Start by chopping the onion and garlic and heating a little oil in a frying pan , then fry the onion until soft, then add the garlic and cook for a further 1 minute.
Next add the Oregano and then add the lamb mince and fry until brown.
Next add in the tomato puree, and the stock cubes mixed in some water, the new potatoes, carrots, peas, and cauliflower florets, and mix together.
Place lid on frying pan and cook until vegetables are soft.
Serve with basmati rice.
Serves 3-4, but if making for a large family add another packet of mince.
