If you are a lover of Italian Fish Kebabs, then this is the tastiest recipe you will ever find for them. They are so healthy, so tasty, and they go great with the sweet tomato and chilli sauce, which is included in this recipe.
To create this recipe properly you will require metal skewers for the kebabs.
Ingredients (Serves 4)
350g Of salmon fillet, cubed
350g Of swordfish, cubed
350g Of monkfish, cubed
2 Yellow, orange or red peppers. Seeded and cut into squares
120ml Of olive oil
30ml/ 2 Tablespoons of fresh chopped leaf parsley
5ml/ 1 Teaspoon of chilli flakes
Finely grated rind and juice of a lemon
Salt and ground black pepper
Ingredients for sweet tomato and chilli sauce
225g Of finely chopped ripe tomatoes
45ml/ 3 Tablespoons of extra virgin olive oil
15ml/ 1 Tablespoon of fresh chopped leaf parsley
15ml/ 1 Tablespoon of lemon juice
1 Fresh seeded and chopped red chilli
1 Crushed garlic clove
Pinch of sugar
Start by pouring the 120ml of olive oil into a bowl, and then add the chilli flakes, lemon rind and juice, and pepper to your taste. Whisk this altogether well and then add all the fish cubes, turning them around so all have been nicely soaked and coated.
Next add the pepper squares into the bowl and coat these well. Cover the top of the bowl and let this marinate in a cool place for around an hour, mixing it all occasionally.
Next start threading the fish cubes and pepper on to oiled metal skewers, and reserve the marinade which is left in the bowl. Grill or barbecue the skewers for around 6-10 minutes, turning once.
Whilst the skewers are cooking, mix together in a bowl all the ingredients that are set out for the sweet tomato and chilli sauce, and season with salt and pepper to taste.
Finally heat the reserved marinade, and remove from the heat. Then mix in the fresh parsley with salt and pepper to taste. Serve the kebabs hot with the marinade, along with the tomato and sweet chilli.
